At only 28 years of age, Shane Delia prides
himself on his entirely original culinary style indicative of the eclectic
influences that have surrounded him professionally and personally. Opening his
first flagship restaurant Maha Bar and Grill in February 2008, Shane will wow
diners in a Mediterranean influenced Middle Eastern eatery and bar.
His love for food extends from four generations of bakers and growing up part of
a large Maltese family where food is more than just a meal, it is a way of life.
To compliment his European past, today his Middle Eastern love for food and its
culture comes from his Lebanese-Australian wife, Maha.
Maltese cooking and its flavours are a reflection of its history where there are
influences from Britain, Italy and Egypt. "Every Maltese village has it’s own
recipe for rabbit - they add a bit of this and bit of that to give each dish a
unique style”, says Shane.
At the age of 21 Shane was sort out and appointed sous chef of Eleonore’s at
Chateau Yering in the Yarra Valley. A year later he was promoted to Chef de
Cuisine and in February 2003 Shane was appointed Head Chef of what is one of
country Victoria’s finest Hotels and a member of the prestigious Relais Chateaux
chain.
Opening up his first restaurant with friend and business partner George
Calombaris, Shane will certainly wow and woo diners with his new Middle Eastern
cuisine.
Shane donates his time to raising funds for the Starlight Children's Foundation
and Oz Child. He has recently appeared on SBS Food Lovers Guide to Australia and
has featured in numerous Australian and overseas television shows and press.
