John Casey commenced work as an apprentice cook
in 1984. Since then he has been devoted to his chosen career, gaining a skilled
knowledge of food styles & techniques.
He started and completed his apprenticeship at the Southern Cross Hotel
Melbourne (a five star, 500 room hotel) from 1984 to 1988. During his
apprenticeship he was successful in several culinary competitions winning gold,
silver and bronze medals.
One of his highest achievements was representing Australia and winning the super
gold at the Culinary Olympics held in Frankfurt, Germany, in the 1988 national
apprentice team.
Since completing his apprenticeship, John has had the opportunity of working in
renowned restaurants, both in Australia and overseas. These include:
• Stephanie’s Restaurant, Melbourne - well known and recognised for culinary
excellence and service.
• The Park Hotel, Kenmare, Ireland - awarded a Michelin star and voted "Best
Hotel in the British Isles", by Egon Ronay Guide. Also a member of the Relais
Chateau and Small Prestige Hotels of the World.
• Adare Manor, Adare, Ireland - a multi-award winning hotel and member of Small
Luxury Hotels of the World. The Adare Manor Hotel & Golf Resort in Ireland, it
is the ultimate luxury five star hotel complete with an 18 hole championship
golf course.
• The Lyceum Club - (established in 1912) one of Australia’s oldest clubs. Draws
its members from a variety of professions, business, the arts and academia.,John
was Executive Chef there for 6 years.
• In 2000, John realized his dream and opened The Culinary Studio, a unique
restaurant and produce store, where he presented his ideas and philosophy on
food preparation the Culinary Studio produce now sold through premium food
stores around Australia.
• In 2003 The Culinary Studio focused on Ready Meals For Sport working with many
athletes from the Victorian Institute of Sport, AFL and individuals in a variety
of sports. John worked closely with dieticians to ensure not only high quality
tasting food achieved but was meeting the dietary requirements of athletes
training for their specific goal.
• 2006 John was appointed Executive Chef/Food Operations Manager of the Zig Inge
Group.
